One of the most rare and unusual teas is this hand produced half-fermented Ti Kuan Yin Milky Oolong from the Anxi region of Fujian Province.
The exact method of manufacture is a jealously guarded secret amongst rival tea estates. The leaves are plucked from wild-growing shrubs, then immediately after withering the still moist leaves are heated briefly over steaming milk water to preserve the light olive-green leaf and cup colour and bring out the distinct creamy scent and taste.
The leaves are rolled manually and dried. An extremely mellow tea with a milky taste and floral/fruit fragrance which can linger over many infusions whilst giving a lighter refreshing taste. This tea just keeps giving with 4 to 8 steepings, where new flavours emerge with each brew.
Brewing instructions: Rinse quickly and then steep with freshly drawn boiled water that has been allowed to cool for 2 minutes for 30 seconds or more with each steep.
